2 pounds of favorite cut of meat/chicken/fish
1 package of spaghetti
1 large red onion
4 large cloves of garlic
2 TBS paprika
1 TBS turmeric
1 tsp ground cumin
1 cup chicken or vegetable broth
1 cup shredded parmigiana
1/2 cup chopped cilantro
salt and pepper to taste
2 heavy cream
1 cup red wine
Cut the desired protein into long strips, Sear in avocado oil and sliced red onion with paprika, turmeric, and cumin. After a few minutes add the garlic, the broth and red wine and cover to simmer for 10 minutes.
cook the pasta till just soft and not too al dente, drain and add to the stew. Stir in the heavy cream, after 5 to 8 minutes add the shredded cheese, turn off the heat. Check for seasoning and sprinkle the cilantro! Nooshe Jan (bon appetit)
