OSSO BUCCO

INGRIDIENTS

1 large red onion

4 cloves of garlic

2 TBS avocado oil

4 lamb shanks

2 TBS salt

cauliflower florets as desired

red cabbage as desired

chopped cilantro

1 TBS turmeric

1 TBS paprika

1/4 tsp cumin

Dough

Sauté red onion in avocado oil and after a few minutes add and Sear the lamb shanks and few cloves of chopped garlic along with salt-turmeric -paprika and cumin. Once the meat is seared all around cover with water and cook till meat is tender (the quickest way to cook the shanks is in a pressure cooker following the manufacturers directions).

Once the shank is fully cooked and falling off the bone, taste the broth and make adjustments to the seasoning (salt & pepper), keep the pot on the stove and add cauliflower and a wedge of red cabbage and boil in the same broth and shanks for 7-10 min. Finally, serve and enjoy.
