1 stick soft room temp butter (1/2 Cup)
1 1/2 Cup sugar
3 eggs
3 ripe bananas
1 tbs vanilla
3 cups of shredded raw carrots
1 tbs lemon juice
4 cups all purpose flour
2 tbs baking powder
pinch of salt
2 tbs cinnamon
cream and sand the butter and sugar for about 7-10 minutes... add the eggs one at a time and blend well, add the smashed bananas and combine for another 5 minutes... add the vanilla, carrots and lemon juice, follow with the flour and baking powder, salt and cinnamon... scrape down the bowl and pour into well greased (buttered or sprayed) desired cake dish. Bake for 40-55 min @ 350
